  • 4 oz (115 g) pancetta or guanciale, diced (you can also use bacon if preferred)

  • Fresh parsley, chopped, for garnish (optional)

    Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until al dente. Reserve about 1 cup of pasta cooking water before draining.
