Chicken Potpie

Cooking Time: 40 mins

Calories: 450

Ingredients: 14

A cozy and hearty Skillet Chicken Potpie made with tender chicken, fresh veggies, and a creamy, savory filling, all topped with a flaky puff pastry crust. This one-pan dish is quick to prepare, making it the perfect comfort food for a family dinner!

Recipe Ingredients

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk (whole or 2%)
  • 2 cups cooked chicken, shredded or diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Salt and pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Step-by-Step Instructions

  1. 1 Step
Prepare the Filling: In a large oven-safe skillet (preferably cast iron), melt butter over medium heat.
  2. 2 Step
Add onion, carrots, celery, and garlic. Sauté for 5–7 minutes, until softened.
  3. 3 Step
Stir in the flour and cook for 1 minute to remove the raw flavor.
  4. 4 Step
Gradually whisk in chicken broth and milk. Bring to a simmer, stirring constantly until the mixture thickens (about 3–4 minutes).
  5. 5 Step
Add the chicken, peas, thyme, salt, and pepper. Mix well and simmer for 2 more minutes. Remove from heat.
  6. 6 Step
Add the Crust: Preheat your oven to 400°F (200°C).
  7. 7 Step
Roll out the puff pastry slightly to fit over the skillet. Place it on top of the filling, tucking the edges slightly into the skillet.
  8. 8 Step
Brush the pastry with beaten egg and cut a few small slits in the top for steam to escape.
  9. 9 Step
Bake the Potpie: Place the skillet in the oven and bake for 20–25 minutes, or until the puff pastry is golden brown and crispy.
  10. 10 Step
Serve: Let the potpie cool for 5–10 minutes before serving. Spoon onto plates or serve directly from the skillet.
